You know what TV show I miss a lot? Friends. The character I miss most of all? Joey. Because Joey loved jam. And I really love jam. So for me, these snack bars are a little piece of heaven. Sweet fruit preserves ooze between tender butter cake and crunchy granola. A hint of almond provides a certain je ne sais quoi without getting in the way of what's important here: the jam!
These treats also have the added benefit of being appropriate at any time of day. Eat one for breakfast and pretend it's a muffin; have one for lunch and call it a sandwich; wash one down with a cold glass of milk for dessert. And feel free to try any type of jam that suits your fancy. I used a mix of pomegranate and rhubarb, but don't let me cramp your style. Heck, if you're feeling sacrilegious you could even forgo jam altogether and use Nutella--just keep your heresy to yourself, you infidel!

I miss Friends too. I really enjoyed one time when Joey was talking about how when he was a kid his mom would drop him off at the movies with a jar of jam and a spoon. HA! Good stuff.

I am crazy for jam and, unfortunately for my thighs, eat it every morning. Bonne Maman is a favorite, love the sweet jars with the red-checked lids. I digress, this recipe stands a chance as being a new all time favorite. And no one else in the house eats jam, so more bars for me! ;0)

Oh, those look so good. Maybe I'll make those on my next day off. I loved Joey for his whole appetite. Although I never saw him and Rachel together.
