In the meantime here's another attempt to make a dent in my baking chip supply:
These little guys are my go-to recipe for oatmeal cookies. You can find it here at Martha Stewart. The secret is to mix up all the wet ingredients and then add the oats, letting them absorb some moisture for at least 20 minutes before adding the flour. The result is a cookie that has great oaty texture and flavour, but the soaking period takes some of the fibrous edge off. They're chewy and hearty and great in the afternoon with a mug of tea. I added bittersweet chocolate chunks and slivered almonds, but the mix-ins are totally your choice. Have a sweet weekend everyone!
